FETTUCCINE CON RAGÙ DI VERDURE PRIMAVERILI

INGREDIANTS:

320 g di Fettuccine Luciana Mosconi
-2 small carrots with greens
-1 fresh spring onion
-a handful of fresh green beans
-2 zucchinis
-a handful of peas with pods
-Salt and black pepper
-Extra virgin olive oil

2- In a large non-stick pan, sauté the spring onion with the carrot in a bit of oil. Once softened, add the zucchinis and shelled peas. Add salt and cook over high heat for 10 minutes. At this point, also add the previously boiled green beans.3- Adjust salt and pepper.4- Cook the Fettuccine in boiling salted water, being careful not to touch the nests in the first two minutes of pasta cooking. Drain it and toss it with plenty of vegetable ragout.
